Oven-Cooked Brisket: Reliable and Flavorful

Why Choose the Oven? The oven provides consistent heat and is accessible year-round. It’s perfect when you want brisket without the unpredictability of weather or the need for specialized equipment. Oven cooking also allows you to infuse flavors through rubs and braising liquids.
Course: Main Course
Cuisine: American

Ingredients

  • 5 to 6 pounds whole packer brisket includes point and flat
  • 2 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper optional for heat
  • 1 cup beef broth or strong brewed coffee
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil

Method

  1. Trim the brisket: Remove excess fat, leaving about 1/4 inch for moisture and flavor.
  2. Mix the rub: Combine salt, pepper, paprika, garlic powder, onion powder, and cayenne.
  3. Apply the rub: Coat the brisket evenly on all sides.
  4. Preheat the oven: Set to 275°F (135°C).
  5. Sear the brisket: Heat olive oil in a large skillet over medium-high heat. Brown brisket on all sides for 3-4 minutes per side.
  6. Prepare the roasting pan: Place brisket fat side up in a roasting pan. Add beef broth and Worcestershire sauce around the meat.
  7. Cover tightly: Use foil or a lid to seal moisture inside.
  8. Cooking Time and Temperature
  9. Roast at 275°F for about 1 hour and 15 minutes per pound.
  10. For a 6-pound brisket, expect roughly 7.5 hours.
  11. Check internal temperature aiming for 195°F to 205°F for tender meat.
  12. After cooking, let the brisket rest covered for at least 30 minutes before slicing.

Notes

Tips for Oven Brisket Success
Use a meat thermometer to avoid over or undercooking.
Resting allows juices to redistribute.
Slice against the grain for tenderness.
Save pan juices for a flavorful au jus.
Brisket pairs well with classic barbecue sides:
  • Creamy coleslaw
  • Baked beans
  • Cornbread or Texas toast
  • Pickles and onions
  • Potato salad
For oven brisket, a drizzle of pan jus enhances moisture.
