BBQ Pork Ribs

Method
Prepare the Ribs
- Remove the membrane from the back of the ribs.
- Pat dry with paper towel.
- Rub olive oil over both sides.
- Apply the Dry Rub
- Mix all dry seasoning ingredients together and coat the ribs generously on both sides.
- For best flavour, refrigerate for:
- Minimum: 2 hours
- Ideal: Overnight
- Slow Cook
- Oven Method
- Preheat oven to 150°C (300°F).
- Wrap ribs tightly in foil.
- Cook for:
- Baby back ribs: 2.5 hours
- Spare ribs: 3–3.5 hours
- The ribs should be tender but not falling apart.
Make the Sauce
- Combine all sauce ingredients in a saucepan over medium heat.
- Simmer for 15–20 minutes until thick and glossy.
Finish on BBQ or Grill
- Preheat BBQ to medium-high heat.
- Remove ribs from foil.
- Brush generously with BBQ sauce.
- Grill for 3–5 minutes per side until sticky and caramelised.
- Add extra sauce during cooking for that classic Tony Roma’s glaze.
